Jewel Chocolates

I made these gorgeous little chocolates, which make a super Christmas present for a health conscious friend:

Peel and cut into tiny squares fresh turmeric and ginger.

Add these to a saucepan and just cover with honey.

Bring to a very low simmer, and keep simmering until the roots are glacéd.

In the mean time, chop some pistachio nuts and set aside.

Put some goji berries to one side too.

Strain and keep the orange and yellow ginger and turmeric.

Spread out a sheet of wax paper.

Gently warm some 90% dark chocolate in a bain marie and then spoon discs of the chocolate onto the wax paper.

As soon as the chocolate has been spooned onto the paper, sprinkle the still soft chocolate with the nuts, turmeric, ginger and goji berries. Allow to cool and store in a airtight container.
